
Similar to meal planning, when I can get it together on the weekend to meal prep for the week ahead, I am so amazed with how much smoother the week goes. Having some foods ready to go in the fridge can make meals so much simpler. Here are a few favorites I like to make heading into a busy week:
- Hard boiled eggs — can be breakfast, a high protein snack or part of an amazing salad
- Roast chicken — once a big chicken is shredded, there’s endless things you can do — we like to put it in salads and pastas
- Healthy muffins — my kids eat them for breakfasts or pack them for snacks
- Roast vegetables — I add these to my breakfasts and lunches all week long; I like to roast brussel sprouts, carrots, butternut squash and sweet potatoes
- Soup — any big pot will do to make quick an easy lunches or a dinner in no time
