For a few months I’ve been sharing my weekly menu plan on Instagram. Today when I posted, I got several requests for these recipes, so I thought that moving forward, I’d capture the first full week of the month and include recipes here that you can use throughout the month. For those recipes where I wing it, I’ll provide guesstimates for ingredient amounts.
So, here’s our June menu plan with recipes below! I promise next month I’ll have some nice pictures!

Sunday — Beef Burgers and Corn
Ingredients for 4 servings:
1.5 lbs ground beef
2 tsp Worcestershire Sauce
1/2 tsp onion powder
1/2 tsp garlic powder
1 tsp salt
1/2 tsp pepper
Buns
Burger toppings
Corn on the cob
For the burgers: Combine beef, Worcestershire sauce, onion powder, garlic powder, salt and pepper. Combine and form into patties. Grill on medium heat to your desired doneness (I like mine medium rare — about 5 minutes per side until it’s 135 degrees Fahrenheit). Let them rest, then put on buns and add your favorite topics and condiments.
For the corn: Peel the corn. Boil for about 5 minutes. Finish them off on the grill to give them a little color and a slight char if you like.
Monday — Ribs and Potato Salad
We use this rib recipe, but as a MAJOR shortcut, we use Secret Stadium Sauce as our sauce (if you’re not from MKE, any favorite bottled BBQ sauce will do).
We love this potato salad recipe.
And I used tossed an Aldi’s Chopped Bacon Avocado Ranch salad for another side.
Tuesday — Greek Quinoa Chicken Salad
This greek quinoa salad recipe is nearly identical to the recipe I make almost weekly. However, I don’t usually use chickpeas, often add avocado, and if I’m in a hurry I use Ken’s Greek Dressing. This week, I’m adding grilled chicken, although I often add rotisserie chicken. My kids love this healthy dinner — it’s one of our go-to healthy weeknight dinners.
Wednesday — Wild Rice Salad with Roasted Squash
My friend Amy was talking about this recipe the other day and I had to try it. I can’t wait to make it later this week. Here’s the recipe.
Thursday — Ground Turkey Tacos
I typically wing my ground turkey tacos, but this recipe is very similar. My family’s favorite toppings include: cheese, guacamole, salsa, and red onion. Some times we put them in tortillas, and some times we eat it over romaine lettuce as a salad.
Friday and Saturday
We don’t cook on weekends typically. One night we order pizza and make a quick salad, and often we’re out one night (or carry out this past year).
Ok, this will be fun! I’ll try to have meals that will be good to make throughout the month and will include photos next time!
