Quinoa salads are a go-to family dinner in my house. I updated this classic — BBQ chicken — for fall by adding apples…and my kids loved it!

This meal always starts with me not having a dinner plan. I reach for the quinoa to create a base for the meal and add in whatever veggies, proteins or cheeses I find in the fridge. Mix with a little homemade dressing and that’s dinner. That’s why I love quinoa salad.
To make this one as easy as possible, make it when you have leftover or rotisserie chicken. It will then literally come together in less than 15 minutes.
Here’s the recipe for BBQ Chicken Quinoa Salad:

Ingredients
- 1 cup quinoa
- 4 cups spinach or arugula
- 2 cooked large diced or sliced chicken breasts
- 1/2 cup BBQ sauce
- 1/2 cup blue cheese
- 1 cup cherry tomatoes
- 1/2 cup diced red onion
- 1 cup chopped Gala or Honeycrisp apples
- White wine vinaigrette
Directions
Cook the quinoa as directed. Set aside to cool. Mix chicken with BBQ sauce. Mix everything besides the dressing in a large bowl. Toss with the dressing to your taste.
